What type of cutting boards are used in commercial kitchens?

Most commercial kitchens use plastic or composite boards. Both are non-porous, which makes them easier to sanitize between jobs than traditional wood, and both go through the dishwasher. Plastic (polyethylene) boards like the Browne Colour-Coded Cutting Board and the Winco White Rectangular Cutting Board are NSF listed and affordable enough to keep in several colours. Composite wood boards, like the Epicurean HACCP Natural Cutting Board, are also NSF certified, nonporous, and stain resistant, and they're gentler on a knife's edge than hard plastic. The HACCP board comes with colour-coded feet, so you can keep the same board for a task. If you're thinking about a traditional wood board, check with your local health inspector first, since rules on wood in a commercial kitchen vary. What size cutting board do I need for a commercial kitchen?

Match the board to the work surface and the food. A 12" x 18" board is a good fit for a small prep station or a bar, a 15" x 20" board is the everyday choice on most lines, and an 18" x 24" board gives you room to break down produce or proteins in bulk. For butchering, or if you prep on a big worktable, the Winco White Rectangular Cutting Board is 18" x 30" and 1/2" thick.
