What is the difference between a sheet pan and a cookie sheet?

A sheet pan has a rim of about an inch on all four sides, while a cookie sheet is flat with one or no raised edges. The rim keeps juices, oil, and batter from spilling, so sheet pans work for roasting vegetables, baking sheet cakes, and holding bread or rolls, and they slide into a sheet pan rack easily. A cookie sheet's open edges let heat and air move across the surface and make it easy to slide cookies off, which is why bakeries use one for cookies, pastries, and biscuits. Should I use parchment paper or a silicone baking mat on a sheet pan?

Either works, and the choice comes down to how much you bake. Parchment is disposable and convenient, but it's a cost that repeats with every batch. What is a Pullman pan used for?

A Pullman pan is a straight-sided loaf pan with a flat lid that slides on top while the bread bakes. The lid traps steam and keeps the dough from rising past the rim, which gives you a square loaf with a fine, even crumb and a soft crust, the shape used for sandwich bread and toast that slices into uniform pieces. Take the lid off and the same pan bakes a rounded loaf.
