Features & Specifications: Ribbed grill surface on one side, flat griddle on the other Induction ready Pre-seasoned
Cast iron holds and spreads heat evenly, which is why a cast iron skillet is a staple for searing steaks, blackening fish, baking cornbread, and sending sizzling dishes straight from the kitchen to the table, and a griddle or grill plate turns a range top into a flat-top for pancakes, smash burgers, and grilled sandwiches. Winco's FireIron Cast Iron Skillet comes pre-seasoned, is induction ready, and has a widened handle with a thumb rest for a steadier grip. For a bigger cooking surface, the IGD-2095 Reversible Cast Iron Griddle/Grill Plate gives you a ribbed grill side and a flat griddle side in one pre-seasoned plate, while the HAG-2012 Hard Anodized Aluminum Griddle Plate adds a 19 5/8" x 12 1/4" flat surface with silicone-wrapped handles that help prevent heat transfer. Phoenix Food Equipment is based right here in Vaughan and ships cast iron skillets and griddle plates across the GTA — Toronto, Mississauga, Brampton, and Oakville included — plus nationwide across Canada.
Common questions we hear from operators.
Yes, as long as the pan is made for it. Cast iron is magnetic, so it works with induction, and Winco's FireIron Cast Iron Skillet and IGD-2095 Reversible Cast Iron Griddle/Grill Plate are both listed as induction ready. That makes them a good fit for a kitchen with a mix of gas, electric, and induction burners, since the same skillet moves between all of them. Hold a magnet to the bottom of any other pan you're considering: if it sticks, it will heat on induction.
Generally, yes. Cast iron is solid metal, so it goes from the burner into the oven without trouble. Winco lists the FireIron skillet for searing as well as sauté, frying, boiling, braising, baking, and roasting, which is why cooks use one skillet to sear a steak on the stove and finish it in the oven. Use an oven mitt, since the handle gets as hot as the pan, and browse the rest of our cookware if you're outfitting a full line.
Keep it dry and lightly oiled. The FireIron skillet and the IGD-2095 plate arrive pre-seasoned, so the job is to protect that seasoning. Wipe the pan out after use, wash it by hand without soaking it, dry it right away, and rub on a thin coat of cooking oil before storing it. Skip the dishwasher, which strips the seasoning and invites rust. If rust does show up, scrub it off, then re-season the pan with a thin layer of oil in a hot oven.
