The Boar Bristle Pastry/Basting Brush has natural boar hair bristles and a wooden handle in round and flat sizes from 1" to 4", the Nylon Pastry/Basting Brush is heat resistant to 300°F and dishwasher safe, and the Red Silicone Brush handles up to 428°F and won't scratch food. Pick a wide flat brush for sheet pans and larger cuts and a small round one for detail work. They are mostly the same tool with two names. A pastry brush is the name used in the bakery, where it applies egg wash, melted butter, or glaze to bread, rolls, and pastry, while a basting brush is the name used in the kitchen, where it applies oil, marinade, or pan juices to meat and vegetables. Winco's nylon brush is described as versatile enough to do both. It depends on what you're brushing. The silicone brush is heat resistant to 428°F, won't scratch food, and is non-stick friendly, which makes it a good pick for marinades, oil, and butter on meat, fish, or bread. The nylon brush is heat resistant to 300°F and comes in flat, round, and concave styles, so it's the versatile choice for both pastry and meat. Natural boar bristles, like Winco's boar bristle brush, hold a lot of liquid and are a traditional choice for egg wash and glazes on bread and pastry, but they are best kept away from very high heat.
Wash the brush soon after use so butter, oil, and egg don't dry into the bristles. Winco's nylon brush has bristles epoxy-set into the ferrule, which prevents bacteria from collecting, and a one-piece smooth handle that's easy to clean. The nylon and silicone brushes are both dishwasher safe. A natural boar bristle brush with a wooden handle should be washed by hand in hot, soapy water and left to dry completely with the bristles facing down or out, and replaced once the bristles start to shed.
