What is a brazier pan used for?

A brazier pan, sometimes called a braising pan, is used to braise: brown meat or vegetables over direct heat, add a little liquid, cover, and let it cook low and slow until tender. That makes it the pan for stews, short ribs, pot roast, braised vegetables, and hearty casseroles in big batches. Its wide base gives you room to sear a full layer of meat instead of crowding it, and because you can brown and braise in the same pan, you keep the flavour that sticks to the bottom. Reach for one whenever a dish starts on the burner and finishes covered.

What is the difference between a brazier and a stock pot?

Shape is the big difference. A brazier is wide and shallow, while a stock pot is tall and narrow. The Winco ALB Series brazier in 15 qt is 14 1/8" across and 5 3/8" tall, while the 40 qt Winco AXS-Series Super Aluminum Stock Pot is 14" across and 15" tall. The brazier's low walls and large base suit searing and braising with a little liquid, and the stock pot's height suits simmering lots of water for stocks, soups, and pasta. What size brazier do I need, and does it come with a cover?

Size it by batch and by what fits your range. The Winco ALB Series runs 15 to 35 qt, from 14 1/8" to 22" across, and the Browne ELEMENTS runs 15 to 30 qt, from 14.2" to 19.7" across, so check the diameter against your burner or range top before you order. The Browne ELEMENTS comes with a stainless steel cover. The Winco ALB Series lists matching covers by model: the AXS-40C for the 15 qt, the AXS-60C for the 18 qt, the AXS-80C for the 24 and 28 qt, and the AXS-100C for the 35 qt.
