Match the screen or pan to the size of pizza you actually sell: a 12" pizza goes on a 12" screen or pan, a 16" pizza on a 16". The Winco Seamless Pizza Screen runs from 7" to 20" in one-inch steps, and the Coupe Style Pizza Pan runs from 8" to 18", so there's a size for everything from a personal pie to an extra-large. Most shops only need two or three sizes to cover the menu, and it helps to have a few of each so a clean one is always ready during a rush. Check the deck of your pizza oven too, since a screen or pan should sit comfortably with a little room around the edges for airflow.
Let it cool completely first, then wash by hand with warm water, mild soap, and a soft, non-abrasive sponge. Dry it right away with a cloth or paper towel, because water left on aluminum can cause limescale to build up. For cooked-on cheese or sauce, boil the screen or pan in water with a little vinegar for four to five minutes to loosen the residue, then wash, rinse, and dry as usual. A proofing box gives portioned dough balls a place to rest and rise before they're stretched. Scale and ball the dough, set the balls in the box with a little space between them, then put the cover on so the surface doesn't dry out and form a skin. Depending on the recipe, dough proofs for a few hours at room temperature or for a day or more in the cooler. The Omcan 80889 boxes are all 26" x 18" and stack tightly, so a full stack of dough takes up very little space, and you can choose the 3.25" or 6" height depending on how much room your dough needs to rise.
