What is a dough scraper used for?

A dough scraper, also called a bench scraper, is a flat blade used to cut and divide dough, lift it off the work surface, and scrape the bench clean between batches. Stainless steel blades, like the Winco Stainless Steel Scraper With Handle (5 1/4" x 4 1/4") or the 6" x 3" model with a plastic handle, are firm enough for cutting and lifting stiff dough. Plastic scrapers are lighter, work well for scraping out bowls, and come in bulk: the Small Plastic Dough Scrapers (Pack of 12) measure 5 1/2" x 3 3/4", and the large ones in a pack of 6 measure 7 1/2" x 4 3/4".

What is the difference between a bakery spatula and an offset spatula?

Both have a flat stainless steel blade. An offset spatula has a bend near the handle that keeps your knuckles up off the surface, so it's easier to spread icing or slide under a cake layer, cookie, or pastry without dragging your hand across it. A straight bakery spatula is the all-purpose choice for smoothing icing across the top of a cake or lifting items off a tray. What size pastry bag do I need?

It depends on the job. A 14" bag is easier to control and suits smaller batches of icing, borders, and fine detail, while a 16" or 18" bag holds more so you can pipe rosettes, fill cupcakes, or portion filling without stopping to refill. Winco's pastry bags come in 14", 16", and 18" lengths with a plastic-coated interior. When you need the bag full of icing for a long decorating session, go larger; if you're working in short bursts with small amounts, a smaller bag saves wasted icing.
