What temperature can plastic food pans handle?

Winco's SP Series polycarbonate food pans are rated from -40°F to 210°F. That range covers freezer and walk-in storage, refrigerated prep, and holding warm prepped food, which is what most kitchens use plastic pans for. What it doesn't cover is direct heat: plastic pans aren't meant for the oven, a burner, or a griddle, so anything that needs to be cooked or baked in the pan should go in stainless steel instead. The pan, cover, and drain shelf are all listed at the same -40°F to 210°F range and are NSF listed, so no single part of the setup is the weak link.

What sizes do plastic food pans come in?

The SP Series follows the same fractional system as steam table pans: full, 1/2, 1/3, 1/4, 1/6, and 1/9 size. Depth is a separate choice. The full, 1/2, and 1/3 sizes come in 2 1/2", 4", 6", and 8" depths, while the 1/4, 1/6, and 1/9 sizes go up to 6". A 2 1/2" pan suits toppings and garnishes, 4" works for sides and prepped ingredients, and the deeper 6" and 8" pans hold bulk prep. What are food pan covers and drain shelves used for?

Covers come solid or slotted in every size from full down to 1/9. A solid cover seals the pan for storage or transport, while a slotted cover leaves an opening for a spoon or ladle so the pan can stay covered on the line. Match the cover to the pan's fractional size. A drain shelf sits inside the pan and lifts food up out of any liquid that collects at the bottom, which is useful for thawing or for drained prepped items. The pans also work with metal covers, so a plastic pan can be paired with whichever cover suits the job.
