What thickness of flatware is best for a restaurant?

Thicker flatware feels heavier in the hand and resists bending, so it's the pick for fine dining, while lighter pieces suit high-volume or quick-service spots where forks and spoons get replaced often. What is the difference between mirror, satin, and vibro finish flatware?
