Why A “500 Lbs” Machine Rarely Makes 500 Lbs

One tip to keep in mind: production is based off of a 24 hr period. So your machine won’t make 500 lbs of ice during a workday from 8am to 8pm. That’s only half the day, so it will only produce about half of that. The rest is being made while your restaurant is closed, preparing for the next day’s customers.
