Rapid Cooling From the Inside Out

The San Jamar RCU64V2RD Rapi-Kool Plus 64 oz cold paddle helps commercial kitchens bring hot food through the temperature danger zone quickly and safely. Harmful bacteria grow fastest between 5°C and 57°C (41°F and 135°F), and large containers of hot food can take hours to cool on their own. Inserted directly into the pot and stirred occasionally, this chill paddle draws heat from the centre of the food outward, cutting cooling time and helping operators meet HACCP and local health code cooling requirements.

Integrated Cooling Fins for Faster Chilling

Moulded cooling fins give the 1.9 L ice wand 50% more surface area than a smooth-sided paddle, so more of the frozen surface is in contact with the food at any moment. The 64 oz capacity is well suited to smaller batches of soups, sauces and gravies in sauce pots and deep hotel pans, and it can stay in the food as the pot goes into the walk-in cooler.

Two Ways to Fill: Freezer or Ice Cube Method

Fill the paddle with water to the fill line and freeze it overnight, or use the wide mouth opening to fill it on demand with ice cubes and cold water when there is no time to pre-freeze. The patented Fill-Rite design prevents over-filling, leaving room for ice to expand into the handle cap so the bottle is not stressed during freezing.

    Built for Safe, Sanitary Handling

The paddle is made from tough, durable polycarbonate with a smooth exterior that is easy to wash, rinse and sanitize in a dishwasher or three-compartment sink. A gasket and threaded cap create a tight seal, and the long handle keeps hands away from hot food and the food contact area. The integrated hanging hook lets staff store the paddle on wire shelving in the freezer or on a hook after washing.

Ready to Use Out of the Package

The RCU64V2RD retail version arrives fully assembled in a clear bag with a hang tag, ready to clean, fill and put into service. Pair it with the 128 oz Rapi-Kool Plus to cover every pot size in your kitchen.

    Questions

    Frequently Asked Questions

    Common questions from operators.

How does a cold paddle help my kitchen meet food safety cooling rules?

Most health codes require cooked food to drop from 57°C to 21°C (135°F to 70°F) within 2 hours and to 5°C (41°F) within a further 4 hours. Sauces, gravies and soups cooled only in the cooler can stay warm in the centre for too long. Stirring with the Rapi-Kool Plus removes heat from the inside out, and the paddle can stay in the pot in the cooler. Always confirm the final temperature with a probe thermometer and record it on your cooling log.

Should I choose the 64 oz or the 128 oz Rapi-Kool Plus?

The 64 oz RCU64V2RD is about 18 15/16" tall, so it fits sauce pots, smaller stock pots and deep hotel pans where a taller paddle would be awkward. For deep stock pots and large batches, the 128 oz RCU128V2RD holds twice the ice. Many kitchens keep both sizes, and using two paddles in one pot cools food even faster.

How should the cold paddle be cleaned between uses?

Wash, rinse and sanitize the bottle and handle cap before every use, either in a dishwasher or a three-compartment sink. Check that the black rubber gasket is clean and seated in the cap, and let the inside of the bottle and cap dry before assembling and storing. Because the wide mouth makes it easier for food to get inside, inspect the bottle cavity after washing.
