Check it at the start of each shift or at least weekly, and any time it's been dropped or gives a reading that looks off. The simplest test is an ice-water bath: fill a glass with crushed ice and cold water, stir, and hold the probe in the middle without touching the sides. It should read 0°C (32°F). If it's off, adjust it if the model allows, or replace it. The Bios DT131 Digital Waterproof Pocket Thermometer and the Winco High Temperature Pocket Test Thermometer are both listed as calibratable. Your local public health unit can tell you how often it expects to see calibration logged.
Put it on a middle shelf, away from the back wall and cooling vents, and never in the door, where warm air rushes in every time it opens. The usual food-safety target is 4°C (40°F) or colder for a fridge and -18°C (0°F) for a freezer. It depends on the job. For spot-checking cooked food, a digital pocket thermometer like the Bios DT134 Digital Waterproof Folding Pocket Thermometer or a dial probe like the Winco Instant Read Thermometer is the everyday choice. An infrared model such as the Bios PS199 Infrared Digital Thermometer reads surface temperature only, so it won't tell you the inside of a cut of meat. Fryers need their own clip-on thermometer, like the Winco 12" Candy/Deep Fryer Thermometer, and coolers and freezers need a dedicated fridge thermometer.
