What's the difference between a planetary mixer and a spiral mixer?
A planetary mixer moves a single beater around a stationary bowl in a planet-like orbit, which works well for icings, batters, mashed potatoes, and lighter bread doughs. A spiral mixer turns the bowl itself around a fixed spiral hook, developing gluten faster and more gently for high-hydration bread and pizza dough without overheating it. What does a proofer cabinet do?
