Commercial Dough Processing Equipment in the GTA & Canada

Dough doesn't process itself — our Dough Processing collection covers every step from mixing to shaping. Choose a planetary mixer for icings, batters, and lighter dough work, or a spiral mixer for high-hydration bread and pizza dough that needs stronger gluten development; most of what we carry here is Alpha, with Globe planetary mixers rounding out the smaller capacities. Our Dough & Fondant Sheeters flatten dough evenly for pastry, pizza, and croissant production, while dough dividers, rounders, presses, and formers portion and shape dough to a consistent weight and size. Our Proofers hold shaped dough at the right temperature and humidity to rise on schedule before baking. We also carry pasta sheeters, pasta makers, and bread slicers for bakeries running a wider prep line. Whether you're outfitting a bakery in Toronto, a pizzeria in Mississauga, or a commissary kitchen right here in Vaughan, we ship dough processing equipment across the GTA — Hamilton, Markham, Scarborough, and Kitchener included — and nationwide across Canada.

Frequently Asked Questions

Common questions from operators buying this kind of equipment.

What's the difference between a planetary mixer and a spiral mixer?

A planetary mixer moves a single beater around a stationary bowl in a planet-like orbit, which works well for icings, batters, mashed potatoes, and lighter bread doughs. A spiral mixer turns the bowl itself around a fixed spiral hook, developing gluten faster and more gently for high-hydration bread and pizza dough without overheating it. Phoenix Food Equipment stocks Alpha planetary and spiral mixers side by side, plus Globe planetary mixers in smaller capacities, so you can match the mixer to what's actually going in the bowl.

What does a proofer cabinet do?

A proofer cabinet holds shaped dough at a warm, humid temperature so it rises evenly before baking, instead of proofing on an open rack where drafts and low humidity can dry out the surface or slow fermentation. Our Proofers come in insulated and non-insulated builds from Alpha and Winholt, with pan capacities from 14 up to 36 full-size sheet pans for anything from a small bakery to a high-volume commissary.

What is a dough sheeter used for?

A dough sheeter runs dough between adjustable rollers to flatten it to a consistent, even thickness in a fraction of the time it takes to roll by hand — useful for pizza dough, pastry, croissants, and laminated doughs where even thickness affects how the final product bakes. Our Dough & Fondant Sheeters come in single-pass and reversible conveyor models from Alpha, in countertop and floor sizes depending on your daily volume.
