High-Volume Vegetable Slicer for Large-Scale Prep
The Brunner-Anliker XL-C is the most powerful table model in the Swiss manufacturer's vegetable slicer line. Built around large 9 1/2" (240 mm) cutting discs and a maintenance-free gear motor, this commercial vegetable cutter processes up to 660 lbs (300 kg) of produce per hour. It is a natural fit for hospitals, universities, central kitchens, banquet operations and food production facilities that prep hundreds of portions every day.
Drawing Cut for a Cleaner Slice and Longer Shelf Life
Brunner-Anliker's drawing cut geometry uses curved blades that pull through the product the same way a chef slices by hand. Instead of crushing cell walls, the blade cuts cleanly, so vegetables lose fewer nutrients, vitamins and moisture. The result is crisper prepped produce that holds its quality longer in the walk-in, with less waste and fewer re-prep runs.
More Than 50 Cutting Options
The XL-C accepts a wide range of 9 1/2" discs for fine and coarse slicing, sickle blade slicing, julienne, allumettes, bâtonnets, tomato slices, shaving cuts, Demidov wave cuts, dicing from 6 to 14 mm and a full lineup of graters, including Parmesan and fondue. Each knife is made in Brunner-Anliker's own knife factory and sharpened by hand, giving an average blade service life of 5 years.
Large Hopper for Whole and Long Produce
The large kidney-shaped filler neck holds 2,100 cm³ of product, and a standard hopper lets staff cut long vegetables like cucumbers and zucchini continuously. The machine is angled at 45° so operators load it while standing upright, reducing strain over long prep shifts.
Maintenance-Free and Easy to Clean
The maintenance-free gear motor is designed for round-the-clock use, and the top and plunger come off without tools. The plunger is made of an antimicrobial fibreglass composite, all removable parts go straight into the dishwasher, and the base wipes clean with a damp cloth. Swiss made and backed by a 5 year warranty, the XL-C is a long-term investment in faster, more consistent food prep with lower labour costs.
