What is the difference between a self-contained and a direct supply countertop steamer?

A self-contained countertop steamer has its own built-in water reservoir and boiler, so it just needs a power outlet and an occasional refill or drain — a good fit for a kitchen without a nearby water line. A direct supply steamer instead plumbs straight into your water supply, feeding steam continuously without anyone topping up a tank, which suits a busier kitchen steaming all day long. Emberglo's ES5 Series comes in both versions across the same 1500W and 1800W options, so the choice comes down to whether you'd rather plumb it in once or keep an eye on a water level.

Should I get an electric or a gas steaming cabinet?

Both work the same way — steam cooks the food either way — so the choice usually comes down to what's already running in your kitchen and your utility costs. Crown and Vulcan both build electric and natural gas/propane versions of their floor steaming cabinets, so you're not locked into one utility type. Cambo's steaming cabinets are gas only. If your kitchen already runs mostly gas equipment, a gas steaming cabinet keeps utility costs consistent; if you're set up for electric, sticking with an electric model avoids running a new gas line.
