A 16-compartment rack suits a smaller bar or a service station with lighter glassware volume, a 25-compartment rack covers most mid-volume bars comfortably, and a 36-compartment rack is built for a high-volume bar or banquet operation cycling large batches of glasses between rushes. Compartments also keep glasses from clinking together and chipping in the wash, so a rack that's too small for the volume means staff either overload it or run extra cycles. What's a cup extender, and do I need one?
