Should I use round or square food storage containers?

It mostly comes down to shelf space and what's going in. Square containers, like the Winco PCSC Series, sit flush against each other, so you fit more on the same shelf or walk-in rack, which is why most kitchens standardize on square for prepped ingredients. Round containers, like the Omcan Translucent Polypropylene Round Storage Container, are easier to stir and scoop clean, so they suit soups, sauces, and dressings. Square containers come in 2, 4, 6, 8, 12, 18, and 22 quart sizes, and the Omcan round line adds a 1 quart size and is stackable. If shelf space is tight, go square. If you're ladling, go round.

Can food storage containers go in the freezer?

Most of them can. The Winco PCSC and Omcan clear polycarbonate square containers are rated from -40°F to 210°F for raw or prepared food, and the polypropylene square containers, like the Winco PTSC Series Translucent Polypropylene Square Storage Container and the Omcan White Polypropylene Square Storage Container, are rated from -40°F to 160°F for prepared food only. The exceptions are the white and translucent Omcan round containers, like the Omcan White Polypropylene Round Storage Container, which are rated from 5°F to 176°F, so keep those to the fridge and cooler rather than a deep freeze. If a container is going from the freezer to a hot line, pick one of the 210°F clear containers. Leave a little room at the top, since liquids expand as they freeze.

What size food storage container do I need?

As a rough guide, 2 and 4 quart containers suit sauces, garnishes, and cut fruit, 6 and 8 quart containers hold soups, prepped vegetables, and cooked rice, and the 12, 18, and 22 quart sizes are for bulk prep, marinating, and stocks. One quart is four cups, and the litre and quart markings on the side make it easy to portion without a separate measuring cup.
