How often should thermometers be calibrated in a restaurant?

Check it at the start of each shift or at least weekly, and any time it's been dropped or gives a reading that looks off. The simplest test is an ice-water bath: fill a glass with crushed ice and cold water, stir, and hold the probe in the middle without touching the sides. It should read 0°C (32°F).
