How many burners does a commercial range need?

A 4-burner, 24-inch range suits a single station or food truck, a 6-burner, 36-inch range is the most common choice for a mid-volume kitchen line, and 8- to 10-burner, 48- to 60-inch ranges — like the Alpha AR60-10B, Vulcan SX60-10B, and American Range AR-10 — handle high-volume, multi-item cooking. Many ranges also swap a couple of burners for a thermostatic griddle or charbroiler, so you can cover more of the menu on one unit instead of adding a separate piece of equipment.

Can a natural gas commercial range be converted to propane?

Yes — nearly every commercial gas range we carry, including full lineups from Alpha, Vulcan, Atosa, and American Range, ships as a natural gas/propane convertible unit. What's the difference between a French plate electric range and an induction range?

A French plate range — like the electric options from Alpha, Imperial, and EFI — uses a solid cast-metal plate heated from below, so it works with any flat-bottomed pot or pan, the same as a standard stove. An induction range, such as Eurodib's lineup, generates heat directly inside the cookware itself using magnetic coils under a smooth glass-ceramic surface, which heats and cools faster and stays cooler to the touch, but only works with induction-compatible (magnetic) cookware.
