How often should I filter my fryer oil?

Most commercial kitchens get the best results filtering fryer oil at least once a day, or after every shift for high-volume frying like fish, chicken, or breaded items that shed more sediment. A mobile filter cart — Alpha's AOF-85, Atosa's FPOF-50, or Vulcan's MF-1 — gets the deepest clean by actively pumping oil out, through a mesh screen, and back in. Between full filtrations, an in-fryer filter insert like those from Frymate can catch large particles daily and stretch oil life a bit further.

What's the difference between a mobile fryer filter and an in-fryer filter insert?

A mobile fryer filter is a standalone cart with its own pump, hose, and wand that actively draws oil out of the fryer vat, pushes it through a fine mesh screen, and pumps it back in — a full deep filtration most kitchens run daily or after each shift. An in-fryer filter insert, like Frymate's line, sits passively in place of the standard fryer grate and simply catches large food particles as you cook, so it's a between-filtrations tool rather than a replacement for a full filter cycle. Most kitchens use both: a mobile filter cart for the deep clean, and an insert to cut down on debris in between.

Can I use filter paper instead of a filter cart?

Not on its own — filter paper is a consumable that works inside a compatible filter cart's filter pan, not a standalone tool. Atosa's FP-1324-5 and FP-1728-5 sheets are sized specifically for the FPOF-50 and FPOF-80 filter carts and sit inside the pan to trap finer sediment that a mesh screen alone can miss. If you don't already own a compatible filter cart, filter paper isn't a substitute — you'll want a mobile filter unit first, with the paper as an added-filtration upgrade on top.
