What's the difference between a meat tenderizer and a meat marinator?

A meat tenderizer uses blades or needles to physically break down tough muscle fibers, either with a hand-held tool or a machine like our Bizerba tenderizer and strip cutter. A meat marinator, more specifically a vacuum tumbler, works differently — it pulls a vacuum on a sealed drum of meat and marinade, then tumbles them together so the marinade absorbs faster and more evenly than a static soak. How does a vacuum tumbler marinator work?

A vacuum tumbler marinator loads meat and marinade into a sealed drum, pulls a vacuum to remove trapped air, and then slowly tumbles the drum so the marinade works into the meat through repeated contact instead of sitting on the surface. Removing the air lets the marinade penetrate faster and more evenly than a bag or open tray, and cuts marinating time significantly compared to a static soak.
