A pizza peel is a long-handled paddle that slides pizzas into a hot oven and lifts them back out, so your hands stay well away from the heat. To launch a pie, dust the blade with a little flour or semolina, build the pizza on it, give it a gentle shake to make sure it moves freely, and slide it onto the oven floor or deck in one motion. A thinner aluminum blade slips easily under a baked pizza, which is why many kitchens use one to turn it partway through the bake and to pull it out.
