What is a dough docker used for?

A dough docker is a roller covered in small spikes that pokes holes across rolled-out dough. Those holes let steam escape while the dough bakes, so the crust stays flat instead of puffing up into bubbles, which matters for thin-crust pizza, flatbreads, crackers, and pastry bases. You roll it across the dough once or twice before it goes into the oven. Winco's plastic dockers come in a 4" wide model where each section rolls individually and a 5" wide model, and the stainless steel docker is 5" wide with an 8" overall length.

Which is better for cutting pizza, a pizza cutter or a rocker knife?

Both work, and many kitchens keep one of each. A pizza cutter, or wheel, is quick for single pies: Winco's stainless steel blade comes in 2 1/2" or 4" diameters, and the contoured handle protects your fingers from the blade. A rocker knife, like the 20" Pizza Rock Knife, has a long blade that you rock down across the whole pizza, cutting it in a single motion, which suits large or sheet-style pies. A dough divider is a set of wheels on a handle that cuts rolled-out dough into even strips or portions in one pass, so you're not measuring and slicing each piece by hand. Bakeries use one for breadsticks, pastry strips, and pasta or pie dough. Winco's 6-wheel adjustable model can be set from 3/4" up to about 4 3/4" between cuts, so the same tool handles narrow strips or wider bands. Roll the dough to an even thickness first, press the wheels through it, and then separate the pieces.
