A mixing paddle is a long-handled paddle for stirring and turning large batches of food that a regular spoon can't handle, such as soups, stocks, chili, sauces, and mashed potatoes, in a stock pot, steam kettle, or tilting skillet. The long length lets you reach the bottom of a deep pot so nothing scorches, and it keeps your hands and arms well back from steam and heat. It's not the same thing as the paddle attachment on a stand mixer, which is a flat beater for batters and doughs. If you're cooking in batches too big for a spoon, a paddle is the right tool.
As a rule of thumb, pick a paddle that is longer than your pot is deep, so you can reach the bottom while keeping your hands clear of the rim. A 24" paddle suits a standard stock pot or large saucepot, a 36" paddle is better for deeper pots and countertop kettles, and the 48" and 60" lengths are for floor-standing kettles and other large-batch cooking. The 60" size is only available in stainless steel. If you're not sure, go one size longer, since it's easier to choke up on a long handle than to stretch for the bottom of a pot.
