Winco makes most of what we carry: the Full Size Sheet Pan (18" x 26", in 16, 18, and 20 gauge) fits most commercial ovens, the 1/2 Size Sheet Pan suits countertop and convection ovens, and the Perforated Sheet Pan lets air circulate for a crispier crust on breads and rolls. A Sheet Pan Extender adds 2" walls so you can bake a sheet cake without buying a separate cake pan. For layered and specialty baking, there are Aluminum Layer Cake Pans, Pie Plates, non-stick Springform Pans for cheesecakes, Quiche Pans with removable bottoms, Loaf Pans, and Muffin Pans in 12 and 24 cup sizes. Serving Vaughan and the wider GTA — including Toronto, Mississauga, Brampton, and Oakville — Phoenix Food Equipment ships commercial baking pans nationwide across Canada.
Common questions we hear from operators.
A sheet pan has a rim of about an inch on all four sides, while a cookie sheet is flat with one or no raised edges. The rim keeps juices, oil, and batter from spilling, so sheet pans work for roasting vegetables, baking sheet cakes, and holding bread or rolls, and they slide into a sheet pan rack easily. A cookie sheet's open edges let heat and air move across the surface and make it easy to slide cookies off, which is why bakeries use one for cookies, pastries, and biscuits. Winco makes both: the aluminum sheet pans above in full, 2/3, 1/2, 1/4, and 1/8 sizes, and a hard anodized 20" x 14" Aluminum Cookie Sheet that's safe to 450°F.
Either works, and the choice comes down to how much you bake. Parchment is disposable and convenient, but it's a cost that repeats with every batch. A Winco Silicone Baking Mat is made of woven fiberglass coated in food-grade silicone, can be used on both sides, and is rated for up to 2,000 uses and temperatures from -40°F to 480°F. It comes in full, 2/3, and 1/2 sizes to match your sheet pans, keeps cookies and pastries from sticking, and wipes clean with a soapy sponge. For high-volume bakeries and cafés, reusable mats can also cut down on how much parchment you buy.
A Pullman pan is a straight-sided loaf pan with a flat lid that slides on top while the bread bakes. The lid traps steam and keeps the dough from rising past the rim, which gives you a square loaf with a fine, even crumb and a soft crust, the shape used for sandwich bread and toast that slices into uniform pieces. Take the lid off and the same pan bakes a rounded loaf. Winco's Aluminized Steel Pullman Pan comes in 1 1/2 lb (13" x 4" x 4") and 2 lb (16" x 4" x 4") sizes with a non-stick silicone glaze, and the matching Pullman Pan Lid is sold separately.
