Large-Capacity Vegetable Slicer with Brunoise Function
The Brunner-Anliker XL-C Star combines the output of a high-volume production machine with specialty cuts usually reserved for smaller units. Powered by a 1 HP gear-driven motor and fitted with large 9 1/2" (240 mm) cutting discs, this commercial vegetable cutter processes up to 660 lbs (300 kg) of produce per hour while still delivering precise brunoise and gaufrette cuts.
Brunoise and Gaufrette Cuts at Volume
A rotating feed tube on the right side of the cutting head is what sets the Star apart. Paired with the BR3, BR4 or BR5 discs, it turns carrots, onions, celery and peppers into uniform 3 to 5 mm brunoise for mirepoix, soups, salsas and sauces. Switch to the PG4 or PG8 discs and the same tube produces gaufrette waffle cuts for potatoes and garnishes. The rotary food pusher for this feed tube is included.
Drawing Cut Keeps Produce Fresher
Brunner-Anliker's drawing cut geometry uses curved blades that pull through the product like a hand-held knife. Cell walls are cut cleanly instead of crushed, so vegetables lose fewer nutrients and less moisture. Prepped produce stays crisp and fresh noticeably longer, helping reduce food waste across the week.
More Than 50 Cutting Options
Beyond brunoise and gaufrettes, the XL-C Star handles fine and coarse slicing, sickle blade slicing, julienne, allumettes, bâtonnets, tomato slices, shaving cuts, Demidov wave cuts, dicing from 6 to 14 mm and a full set of graters. Every knife is made in Brunner-Anliker's in-house knife factory and sharpened by hand.
Built for Comfort, Hygiene and Continuous Use
The 45° working angle lets staff load the large 7" x 3 3/8" hopper while standing upright, reducing fatigue during long prep shifts. The cast aluminum upper housing sits on a stainless steel body and base, built-in antimicrobial protection supports food safety, and thermal overload protection guards the motor. All removable parts are dishwasher safe. Swiss made and backed by a 5 year warranty.
