What does moisture injection do on a TurboFan oven?

Moisture injection adds steam to the oven cavity during cooking. On TurboFan digital ovens like the E32, E33, and E35 series, you can choose from 5 levels or inject manually. A little moisture helps bread rise and form a crisp crust, and it keeps roasts and vegetables from drying out. You can also save it as part of a 3 stage program. Can I stack a TurboFan oven on a proofer?

Yes. TurboFan ovens are designed to stack on matching proofer and holding cabinets, and we carry ready made combos like the TurboFan E32D5/P8M Oven and Proofer Combo. The P8M and P12M cabinets proof dough or hold cooked food, with temperature and humidity controls and an auto water fill. You can also mount an oven on a stainless steel stand with pan supports.
