What's the difference between polycarbonate and polypropylene food storage containers?

Polycarbonate is the clear option, so you can see what's inside without popping the lid, and it handles a wide temperature range. The PCSC Series is rated from -40°F to 210°F and suits both raw and prepared food. Polypropylene is stain resistant and comes in white or translucent, but the PESC Series is rated for prepared food only, with a top temperature of 160°F. For a polypropylene container where you can still see the fill level, the Winco PTSC Series Translucent Polypropylene Container is a good pick, and the Omcan Clear Polypropylene Round Storage Container is clear and also rated for prepared food. The Winco containers are all NSF listed and dishwasher safe, so the choice mostly comes down to what's going in and how hot it will get.

What size ingredient bin do I need?

It comes down to how many pounds of your heaviest dry ingredient you go through between deliveries. The Winco IB-5S Shelf Ingredient Bin holds about 37 lbs of sugar or 29 lbs of flour, while the IB-10S doubles that to 75 lbs of sugar or 59 lbs of flour. For a busy bakery or pizzeria, the 21-gallon Omcan 80985 holds 159 lbs of sugar or 124 lbs of flour, and the Omcan 80986 Ingredient Bin goes up to 197 lbs of sugar or 154 lbs of flour. Both of those roll on locking casters, so one bin can serve several stations. For a pantry or a small amount of specialty flour, the Omcan 80987 2 Gallon Ingredient Bin or the Omcan 80989 10 Gallon Ingredient Bin are easier to fit on a shelf.

Do food storage containers come with lids?

Usually not. Lids are sold separately, so you pick the cover to match the container. The Winco PECC Series White Cover fits the PCSC, PTSC, and PESC square containers and comes in three sizes: one for 2 and 4 qt, one for 6 and 8 qt, and one for 12, 18, and 22 qt. If you want to colour-code by station, allergen, or shift, the Winco PECC-Series Coloured Cover comes in green, red, and blue.
